Description

Razor clams are long, narrow, edible bivalve molluscs of the genus Ensis or Siliqua and are named for their resemblance to straight-edge “cut-throat” razors. They are prized for their sweet, tender white meat and are found buried deep in sandy, intertidal ocean beaches, where they are harvested by hand or using a “clam gun”. Alisdair’s paternal Grandfather was a fisherman, originally from Gardenstown (pronounced Gem-ree by the locals, with a hard G) on the east coast of Scotland. So he had a very different accent from the rest of his family on the West Coast. He didn’t call them razor clams. For him, they were spootfish.
